Climax Red Chili Recipe (Vegetarian)

Spice Mix: (combine and reserve)

2-3 T. chili powder (I used 1 ½ for Christmas)

1 T. cumin

1 T. oregano

1 t. paprika

½ t. cayenne

½ t. thyme

¼ t. pepper

1-2 t. salt

Sauté:

1 onion – diced fine

1 red pepper – diced

1 green pepper – diced

1 jalapeno – seeds and ribs removed to reduce heat

5 cloves garlic – minced (add garlic and spice mix during last minute of sautéing)

De-glaze:

Add 12 oz (1 ½ C. of Climax Red wine) and simmer for a few minutes to reduce wine

Add and Cook 3-5 minutes:

1 can black beans – drained and rinsed

1 can kidney beans – drained and rinsed

1 can fire roasted tomatoes (or diced tomatoes plain to reduce heat)

1 can corn – drained

1 can tomato sauce

Combine and Add:

1 can refried beans (spicy jalapeno refried beans are an option)

2/3 box veggie broth

Cook 10-15 minutes

The 2019 harvest is underway at Holgate Hill! We will be neck deep in grapes until Thanksgiving, but that doesn’t mean we won’t have some fun things in the tasting room for you this Fall. Mark your calendars for some of these cool events.

Afternoon Wine Tasting
at the Amador Vintage Market
Saturday, September 14th, Noon – 4pm

We are pouring at the Vintage Market the same day as the Amador Barbera Festival! Stop by to grab a bite and taste some of our new releases before we pour them in our tasting room.

Big Crush Harvest Wine Festival
October 4th – 6th

Each year we celebrate the grape harvest by inviting our friends to join for the Big Crush Harvest Wine Festival and get in on this most exciting time of year! Visit each of the participating wineries and you will be welcomed to the scenic foothills of Amador Wine Country by the entire wine community.

Come on down to Historic Amador City to try your luck on the Holgate Hill Prize Wheel and enjoy our new release wines this Big Crush! Purchase any 6 bottles, or join our Wine Club, for a chance to spin the Prize Wheel during the Big Crush (current members automatically qualify for a spin). Enjoy our new releases, Syrah and Climax Red, paired with Cassidy’s Famous Dolmades: grape leaves stuffed with zesty rice and seasoned lamb topped with a refreshing tzatziki sauce. We are open 11am to 6pm Saturday and Sunday.

Dancin’ in the Street in Amador City!

We are OPEN LATE (until 8pm) for Dancin’ in the Street on the following Saturdays:
6/15, 6/22, 6/29, 7/6, 7/13, & 7/20
Dancin’ is from 6pm-9pm.

Saturday nights in the summer in Amador City is the place to get your groove on. Fantastic bands to get you movin’, and delicious foods and drinks.

Come early! Check out the shops and stake out your seat on a hay bale. It’s always a great summer for dancin’ in the street. See you there!
